Successful Experiment....New Recipe!

Spaghetti with Parmesan & Bacon~

1 pound uncooked spaghetti
3 garlic cloves, minced
1 teaspoon of salt
3 large eggs
1 1/2 cups (6 oz) of fresh grated parmesan cheese
12 slices of bacon, chopped
1 cup of 2 % reduced fat milk
1 teaspoon freshly ground black pepper
1 cup of frozen peas thawed

Directions:
  1. cook pasta according to package directions. drain in colander over a bowl, reserving 1/2 cup of hot cooking liquid
  2. While pasta cooks, cook bacon in large non-stick skillet over medium heat until crisp. Remove bacon from pan, reserving 1 teaspoon of drippings in pan. Discard remaining drippings & set bacon aside. Add garlic to drippings in pain; cook 30 seconds stirring contstantly.
  3. Combine milk, salt, pepper & eggs, stirring with whisk. Gradually add reserved hot cooking liquid to milk mixture, stirring constantly with whisk. Add pasta, milk mixture, and peas to skillet; cook over low heat for 3 minutes or until sauce thickens. Add bacon & cheese; stir to combine & serve.
Absolute hit here at my house. I do not buy real bacon, I used turkey bacon & since I am the only one who likes peas, I left them out. There was not a single strand of spaghetti left!!!! I will be adding this to my regular menu!!!

Menu Planning Monday

Now that spring is here, I find myself wanting to let go of the heavy comfort foods of winter. I have been in search of lighter fare....Once the weather decides to stay warm, we will be utilizing the grill which I LOVE!

Monday~Spaghetti with meatballs & sausage, salad & garlic bread

Tuesday~use leftover spaghetti sauce to make baked ziti with salad & garlic bread

Wednesday~Ham, au grautin pototoes, green beans

Thursday~marinated chicken, fresh fruit & veggies, potato salad

Friday~tuna steaks on the grill, fresh fruit & veggies, potato salad

Saturday~homemade pizza, salad, fruit

Sunday~One Pot Chicken Cordon Blue in the crockpot

I have to say...I love Laura & I love http://www.orgjunkie.com/. Her posts are inspirational & motivating. She also has taught me that I am not alone in being self-professed organizing junkie! Organizing provides me with an incredible sense of accomplishment and satisfaction that few things have provided me. The benefits of being organized seem to be endless.....being organized creates more time (something every mom needs! Aren't we always saying that there are not enough hours in the day?), less clutter (mentally, for me this is huge. I find clutter to be a mental roadblock!), more space, ability to know what you have on hand....and on and on!


I have been plugging along with the 28 day organizing challenge & tackled some of my most problematic areas in my home. Areas that desperately needed to be organized & decluttered! I would have had more to share as far as pictures go but on January 1, I spent the entire day cleaning, decluttering & organizing my kitchen & dining room. Getting the biggest & most cumbersome projects out of the way first is important....I did that. I have been in heaven when I have to be in my kitchen ever since! I can find anything I need out there! I know where it all is! I even have organized "junk" drawers. Everything has a home & can easily be located. I am stickler for it all getting put back where it belongs too!

Working along with the www.orgjunkie.com 28 day organizing challenge....I tackleld several problem areas in my house. I finally decided to part with some products that had been taking up precious space for far too long. I decided to donate any un-opened products to a local mission. I threw out all kinds of miscellaneous things I found lingering in baskets & shoved into tight little spots in the closet. I have tried to keep this closet pretty tidy but the reality was that there was just too many things spread out & too many unused products. Getting rid of those things & organizing what was left provided me with an incredible high! I love, love, love to organize & declutter! I love to purge things! I love how freeing it is! I also love that I now know where everything is in that closet!!!
